Tamaki - Hand Roll
A large cone-shaped piece of seaweed on the outside, with the
ingredients spilling out the wide end. |

Ebi - Prawn
Filleted prawn over rice with wasabi underneath. Tail is kept on but
not eaten.
This type of sushi is called Nigiri,
and is always served in pairs to represent peace.

Unagi- Eel
Eel, rice, seaweed strip, usually garnished with sesame seeds.
It is traditionally eaten on the hottest
days of the year to provide strength and stamina for the rest of the year. |

Tamago - Egg
Sweet Omelette over rice with a seaweed strip.
They say you can judge the skill of a sushi
chef by the way they make Tamago! |

Hamachi - Yellowfin
Raw Yellowfin over rice and wasabi. They are also eaten cooked
and are a seasonal favourite in the colder months when the meat must have
higher fat content. |

Tako - Octopus
Sliced octopus over a rice, with wasabi underneath and a strip of seaweed.
Quite sweet in flavour, sometimes chewy. |

Hokkigai - Surf Clam
Also called "Hokkyokugai" sliced and pressed on rice and wrapped in
seaweed.
I would have to say this is similar to Tako
but a lot more tender and more melt in your mouth. |

Saba - Mackerel
Mackerel is Saba in Japanese, and is an extremely flavoured fish.
Mackerel must be put on ice within 6 hours of being caught otherwise the
flavour is lost. |

Ikura - Salmon Roe
Small cups of rice and seaweed, filled with Salmon Roe (salmon eggs)
Ikura is a word borrowed from Russia "Ikra"
meaning Caviar. Ikura is the 2nd most popular sushi eaten in Japan. |

Maguro - Tuna
Filleted Tuna pressed over rice and wasabi. Usually the more expensive type
of nigiri, it is perhaps the best know and the most commonly eaten fish in
all of sushi dining. |

Sake - Salmon
Filleted Salmon pressed and turned over rice and wasabi.
Turning and pressing the fish is called Tegaeshi 手返,
it ensures that the fish is evenly over the rice.

Futomaki - Thick Rolls
Thick Roll sushi have many ingredients, each piece being very
large. There are very many variations of this sushi, this one being
a vegetarian version. |

Insideout Roll - California Roll
Not well known in Japan, a California Roll is Uramaki: an insideout roll.
Inside is crab, cucumber and avocado, with
ikura on the outside. |

Hosomaki - Thin Rolls
Thin Roll sushi with very little rice. Usually served in 6 pieces, they
can be filled with:
Salmon (Sakemaki - サーモンロール)
Cucumber (Kappamaki - 河童巻き)
Tuna (Tekkamaki - 鉄火巻き)
Pickled Radish (Takuan - たくあん巻) |
